Experience an unforgettable evening filled with delectable cuisine, exquisite wines, and exceptional live music that will enchant you and your sweetheart.

Course ~ 1

Warm freshly baked bread & butter.

Beef Wellington bites served with a delightful Dolcetto wine sauce.

Wine pairing ~ Firelight Vineyards Saturn Missile.  This diverse blend of Dolcetto, Syrah, Cabernet Sauvignon & Merlot compliment the richness and savory flavors of the beef Wellington.  The fruit forward characteristics of this dry red contribute to a harmonious pairing.


Course ~ 2

A bed of crisp fresh greens adorned with a medley of fruit pieces, gourmet cheeses, and drizzled with vinaigrette dressing.

Wine pairing ~ Choice of Firelight Vineyards Sparkling Peach or Diamante Bianco, a dry white Italian blend of Chardonnay, Trebbiano, & Malvasia Bianca with a fresh finish.  Both wine options promise to elevate your tasting experience, catering to diverse palates. The choice is yours for this course – indulge and savor the one that suits your preference!


Course  ~ 3

Slow-smoked, locally sourced fresh prime rib from Hess Meat Market in Valley View, TX. Accompanied by a side of creamy horseradish sauce and elegantly presented with sautéed asparagus wrapped in carrot ribbons.

Wine pairing ~ Firelight Vineyards 2021 Cabernet Sauvignon, aged with French oak.  The robust and full-bodied characteristics of this wine complement the rich and savory flavors of the prime rib, creating a delicious and well-balance pairing. 


Course ~ 4

Amuse-bouche dessert assortment.  No need to pick – delight in the experience of all four decadent treats! Indulge in the successive layers of different textures and flavors.

Chocolate amuse-bouche: Chocolate ganache, chocolate mousse, and cocoa sauce topped with white chocolate shavings.

Lemon meringue amuse-bouche: Crumble, lemon mousse, meringue, and semi-confit lemon zest.

Tiramisu-style amuse bouche: Biscuit soaked in coffee, mascarpone mousse, Chantilly cream, cocoa powder.

Vanilla & raspberry amuse-bouche: Biscuit soaked in raspberry syrup, vanilla-flavored sabayon, raspberry jelly, raspberry and chopped pistachios.

Wine pairing ~ Firelight Vineyards Shooting Star – Moscato.  The light and fresh character of this Moscato will pair perfectly with the sweetness of the petite dessert cups, creating a harmonious balance.
